Bacon-Wrapped Pork Fillets with Apple Stuffing

  1. 10ml oil
  2. 1 red onion
  3. 5ml Robertsons Sage
  4. 1 red apple, cubed
  5. 1 green apple, cubed
  6. 2 pork fillets, whole
  7. 100ml walnuts, chopped finely
  8. 1 pinch Robertsons Atlantic Sea Salt
  9. Robertsons Freshly Ground Black Pepper (to taste)
  10. 6 rashers bacon
  11. 1 x KNORR Sausage Gravy

Method

  1. Preheat oven to 180°C.
  2. Fry onion, apple and sage in a little oil until soft.
  3. Stir in walnuts and set aside.
  4. Slit the fillets down the length and divide the apple mixture evenly.
  5. Wrap the bacon around each fillet and secure.
  6. Place in the oven for 30 minutes and roast till cooked though at 180°C.
  7. Serve with brown rice, vegetables and KNORR Sausage Gravy prepared as per packet instructions.
