Preheat oven to 180 degrees C.
Place all the ingredients in a sandwich bag and give it a good mix to ensure the dressing covers all the ingredients.
Place in a roasting tray and squeeze out any dressing in the sandwich bag over the ingredients.
Season with salt and black pepper and drizzle some olive oil on top.
Bake for 45-60 minutes, basting a few times with the pan juices, until the chicken and potatoes are cooked through and browned.
Serve with grilled tomatoes on the vine and steamed green beans.
