Halve or quarter the peaches, nectarines or plums, and remove their stones.
Pour the KNORR Creamy Italian Salad Dressing and the water into a pan, set over a medium-high heat and bring to the boil. Remove the pan from the heat, add the fruit, and mix gently to combine. Cover and set aside to marinate until needed.
Pour the vegetable stock into a pot, cover and bring to the boil. Add the millet, then turn down the heat and simmer, uncovered, for 20 – 30 minutes, or until the millet is tender.
Drain the millet in a colander, then tip it into a mixing bowl. Use a fork to fluff up the grains, then add the lentils, chopped chives and parsley, and toss gently to combine.
Tip this mixture into a serving bowl or platter and serve immediately with the marinated fruit and buffalo mozzarella.
