Clean the mussels by scrubbing the shells clean and removing the ‘beards’. Set aside.
Heat the olive oil in a large pan, add the chopped onion and garlic and fry gently for 2 minutes.
Add the KNORR Tomato Base Dry Cook-in-Sauce, tomatoes and fish stock, stir well and leave to simmer for 5 minutes. Season to taste with salt and pepper.
Add the mussels, cover with a lid and leave to simmer for about 3 minutes, or until all mussels have opened. (Remove and discard any mussels that haven’t opened.)
Remove from heat, garnish with coriander or parsley and serve immediately with toasted bread.
Tips: If you don’t have fish stock, use half a Knorr Vegetable or Chicken Stock Pot dissolved in 125 ml hot water. You can also use frozen mussels on the half-shell in place of fresh mussels.
