Classic beetroot soup

A delicious and nutritious beetroot soup recipe that is simple to make and ideal for hot summer evenings – simply simmer, blend and enjoy!

  1. 30ml sunflower oil
  2. 1 onion, finely diced
  3. 2 large cloves garlic, crushed
  4. 4 medium beetroot, peeled and cubed
  5. 2 carrots, peeled and sliced
  6. 1 x KNORR Vegetable Stock Pot
  7. 750ml water

Method

Method

  1. Heat oil in a saucepan and cook the onion and garlic over a medium heat until soft
  2. Stir in the chopped beetroot and carrots and cook for 5 minutes
  3. Add the KNORR Vegetable Stock Pot and water, bring to the boil then reduce the heat and simmer covered for 30 minutes or until the beetroot is tender
  4. Remove from the heat and blend until smooth using a hand blender or food processor
  5. Serve garnished with chopped chives and a swirl of cream
