Fry brinjal slices in oil until cooked and place onto absorbent paper.
Add mince and onion to the pan and brown together before adding the tomatoes and baby marrows.
Add the sachet of uncooked rice.
Combine the seasoning mix with warm water and pour over the mince and rice.
Bring to the boil stirring occasionally.
Reduce heat and allow to simmer covered on low to medium heat for 20 min, stirring occasionally until the rice is cooked.
Layer 1/2 of the mince and rice mixture in an ovenproof dish and top with half the slices of brinjal.
Repeat this process ending up with mince and rice on the top.
Make the white sauce topping by placing the powder in a measuring jug and filling it up to the 250 ml mark with rapidly boiling water.
Stir with a fork for 1 minute until thick and smooth.
Pour white sauce over the mince dish, top with cheese and grill for 15 min until the cheese is bubbling and golden brown.
