Preheat the oven to 140 °C.
Heat the oil in a big pot and deep fry the frozen sweet potato fries, in batches, according to the package instructions. Place on paper towels to absorb any excess oil. Season to taste with salt and pepper, and keep warm on a baking sheet in the oven.
While the sweet potato fries are cooking, make the dip. In a small bowl, whisk together the mayonnaise and the KNORR Creamy 1000 Island Salad Dressing.
Garnish the sweet potato fries with fresh parsley and serve hot with the dip.
